Ingredient list for the Cobbler Filling:

4 Cups Blueberries
4 Cups Or about 4 ea. Peach’s (cleaned & sliced into 1/2” pieces)
1/2 Cups Granulated Sugar
2 Tablespoon All Purpose Flour

Ingredient list for the Cobbler Topping:
11 oz. All Purpose Flour
3 oz.Granulated Sugar
1 1/2 Tablespoon Baking Powder
1/2 Tablespoon Salt
4 oz. Cold Butter (cut into 1/4 inch cubes)
1 1/2 Cups Heavy Cream
1/2 Cups Light Brown Sugar
4 Tablespoon Unsalted Butter (softened)

Preheat oven to 400 degrees.

For the filling:
Mix the peach’s, blueberries, sugar, & flour together in a bowl. Fill up 6oz ramekins leaving 1/4 inch from top.
For the topping & plating: mix together all the dry ingredients, cut the cubed butter into dry ingredients till flaky & make a well. Pour chilled heavy cream into well & mix all ingredients together until well combined. Form into 1/4 inch disks and put on top of ramekins that are filled. Butter top of cobbler topping & sprinkle with golden brown sugar. Bake at 400 degrees for approximately 12 minutes or until topping is golden brown. Top with vanilla gelato
