Yeild: 3 ½ lbs.

INGREDIENTS

4 lbs. Sweet Potatoes, peeled and large diced
4 lbs. Water
1 oz. Salt
.1 oz. Cayenne Pepper
8 oz. Butter, melted

DIRECTIONS:
1. Place potatoes and water in a pot and bring to a boil. Boil potatoes until fork tender and ready to be blended.
2. Drain potatoes from water, but reserve that water. Place the potatoes, salt, cayenne pepper, and butter in a blender, in batches if needed, and blend until completely smooth. Use reserved water, if needed, ONLY to get the potatoes to puree, as this should be a thick puree, not thin.
